CURLY KALE HEMP SALAD

All it takes is just a few ingredients to create this simple but special salad. Nutty soft hemp combined with tender kale and sweet raisins creates a protein rich salad absolutely packed with vitamins and antioxidants!

 

Easy to make and keeps for days.

 

Hemp is a good source of omega 3,6 and 9 in the right proportion and is a complete high quality protein source which is very easy absorbed by our body. Kale is filled with powerful antioxidants, is an excellent source of vitamin A B,C and K, contains lots of good dietary fibers and is filled with minerals like Manganese, Copper, Calcium, Iron, Magnesium, Kalium, Iron and Phosphorus..

Raisins carry a very high antioxidant value!

 

INGREDIENTS

 

Bunch of kale, ribs removed and finely sliced (about 3 cups)

4 tablespoons shelled hennep seeds

4 tablespoons raisins (washed and soaked)

 

DRESSING

 

4 tablespoons hemp oil

3 tablespoons apple vinegar

2 tablespoons maple syrup

2 gloves garlic

1 teaspoon Celtic salt

chilipeper

 

Use the kale when it’s as fresh as possible, kale gets much more bitter as it gets older.

Kale should be washed thoroughly in clean running water and swished in saline water for about 10-15 minutes in order to remove soil, dirt and any fungicide/insecticide residues.

 

Whisk all the ingredients for the dressing together in a bowl, keep whisking until all the ingredients are thoroughly combined.

 

Place finely sliced kale in a large bowl add dressing and massage the dressing into the kale until the kale starts to soften and wilt. This will take 2-3 minutes. Add the remaining ingredients and set aside at least half an hour, the longer the better.

The key to making a kale salad that is tender and not tough is to massage the kale. When you massage the kale with this dressing the tough cellulose structure breaks down and those leaves that once seemed so coarse and fibrous turn silky.

 

This salad will keep very well in the fridge – in fact it improves with age- so feel free to make this salad in advance or to have the leftovers for lunch the next day.

 

Remove the paper or teflex once the crackers are holding their shape together very well (6 to 8 hours) break them apart along the score lines. Remove the parchment or teflex sheets and place the crackers directly on the dehydrator tray and finish dehydrating.

 

Store in an airtight container in the refrigerat for about a week or longer.
