There’s a compound in spinach called oxalic acid, which blocks the absorption of calcium and iron. An easy way to solve this problem is to pair spinach with food high in vitamin C.

Buy your spinach organic because the leaves tend be sprayed heavily with pesticides that don’t come of with normal washing.

-Spinach

-1 or 2 tablespoons shelled hemp seeds

-1 red onion sliced thinly

-black pepper

Cut peel and white pith from orange. Cut orange into 1/3- inch rounds. Put spinach in large bowl.

Add all the other ingredients + dressing and toss gently.

Spinach, should be washed thoroughly in clean running water and swished in saline water for about 10-15 minutes in order to remove soil, dirt and any fungicide/insecticide residues.
