Make your own blissfully elegant, decadent and delicious truffles!
These truffles are easy to make and packed with healthy ingredients like coconut butter, hemp, walnuts, apricots and raw cacao.
Hemp provides a complete and easy to digest protein. Coconut butter is rich in lauric acid, which boosts immunity and destroys harmful bacteria, viruses and funguses. It contains healthy fats, essential amino acids, calcium and magnesium.
Apricots are a good source of fiber they also contain vitamin A, C and Iron
Raw cacao has a high mineral content and a wealth of antioxidants.

There is a difference between coconut butter and coconut oil; coconut butter is made from the meat of the whole coconut. Coconut oil is oil that is extracted from the coconut and is pure fat. They are both calorie dense.
¾ cup coconut butter
½ cup shelled hemp
½ cup walnuts, or hazelnuts (soak 8 hours or overnight)
15 dried apricots (soak if necessary)
½ cup maple syrup
½ cup (raw) cacao (sifted)
1 tablespoon vanilla extract
a pinch of stevia (optional)
Nuts have enzyme inhibitors that prevent them from sprouting in dry conditions. They also contain phytic acid which can make it very difficult for our bodies to digest them. Once soaked they begin to sprout which unlocks their nutrients and make them much better for digesting.
They taste better as well. Rinse your nuts well after soaking.
Soften the coconut butter by placing the jar in a hot water bath.
Grind the soaked walnuts but leave them chunky.
Slice the dried apricots in fine pieces.
Mix all the ingredients by hand and shape the fudge into small balls.
Decorate with shelled hemp seeds, cacao powder, ground nuts of shredded coconut
Place in the freezer for a couple of hours before serving.
