STRAWBERRY HEMP ICE CREAM COVERED WITH CHOCOLATE
Juicy, summery, sweet and healthy strawberries combined with creamy hemp butter makes this totally creamy, yummy strawberry ice cream. Cover it with raw chocolate and create an elegant, easy to make dessert.
Strawberries are an excellent source of vitamins C and K as well as providing a good dose of fibre, folic acid, manganese and potassium.They also contain significant amounts of phytonutrients and flavanoids which makes strawberries bright red.
Strawberry Hemp Ice Cream
2 cups strawberries
3 tablespoons hemp butter
½ cup coconut oil
2 tablespoons honey
1 tablespoon lemon juice
2 teaspoons vanilla extract
pinch of Celtic salt
Blend the strawberries with the lemon juice, honey, vanilla and salt.
Add hemp butter and coconut oil and blend until completely smooth
and creamy. Set aside in the fridge.
1 cup coconut oil (liquid)
½ cup (raw) cacao powder
¼ cup maple syrup or honey
Blend all the ingredients until smooth
Using an ice cube tray or chocolate molds, spoon a tablespoon of chocolate into the mold, cover the sides as well.
Put into the freezer until it hardens (10-15 minutes)
Add a tablespoon of strawberry ice cream and freeze until it hardens (another 10-15 minutes)
Cover with another chocolate layer and return to freezer for another 15 minutes
